Scallops are renowned for their sweet flavor and firm texture. They are particularly versatile which adds to their popularity.
In order to preserve the succulent character of scallops, they should not be overcooked. When the outer surface of the meat turns opaque, the inside is practically cooked, and the scallop is at its most moist and flavorful.
Large scallops may be sliced crosswise into ¼ to ½ inch thick discs in order to marinade them for salads or use them as appetizers. Scallop pieces are also available for that purpose.
